What are we looking for?
1- Transfer the freshness and complexity of the Ribera del Duero from Burgos to our wines. We don´t want that the elaboration process masks the greatness of our area.
2- Each of our vineyards ferments separately. Thus it maintains its individuality until the end of the aging. To do this, we adapt the production techniques to the uniqueness of each vineyard.
3- Spontaneous fermentations with native yeasts: the yeast population of each vineyard is different and will provide differentiating characters to the wine.
4- We adapt the aging times to the characteristics of each vineyard and each vintage. We vary depending on what we determine is optimal for each wine.
5- Each wine will be part of the final blend of Corimbo or Corimbo I depending on the age of the vineyard and its peculiarities and organoleptic profile.
6- Our wines are the way to discover the landscape of our environment, as well as the characteristics of the vintage.
